にんじんケーキを焼きました。

砂糖が一切入っていないのに、

こんなにおいしいなんて！

ちかごろ愛読しているHeidi Swansonの101cookbooks。

疲れた体と心に、じわっと優しく染みわたる、

といった感じのレシピばかり。とにかくホッとします。

このケーキ、砂糖が１っ粒も入っていません。

甘さはすべて、にんじん、バナナ、デーツから。

焼きあがったケーキの上にたっぷりと乗せた

クリームチーズは、メープルシロップで甘み付け。

カフェでにんじんケーキを見かけると、他のケーキとの間で

かなり心が揺れ動くくらいにんじんケーキが好きです。

（ちなみにドバイで一番おいしいにんじんケーキを作るのは、

ドバイに住む人たちにとっての癒しの場゛Lime Tree Cafe゛）

今回作ったHeidiのにんじんケーキは、ナッツもたっぷり

入っていて、自然の甘みとコクが絶妙なバランスです。

夜寝る前に食べたくなったときでも、罪悪感は

そんなになさそうか。

Oh my, I just fell in love with her website.

All her recipes are absolutely attractive and believe me,

I am already craving for the carrot cake I baked yesterday,

which is now sitting neatly in my fridge.

Carrot cake is one of the things that I often have a huge

cravings for. Sinking my teeth into a dense and moist carrot

cake that is bursting of varying textures and flavours...

Really, what more do I want?

Heidi's carrot cake recipe is all these. Textures, tick.

Flavours, tick. And is it easy to make? Oh yes.

Although carrot cake has always positioned itself at the

top of my favourite cake list, I have always feared to try out

all those different recipes that are available on the internet.

I am usually quite adventurous in trying out different ideas on

recipes but when it comes to something like carrot cake,

I am scared to fail.

I love myself now that I have found Heidi's website !
