Gazpacho-ish Sauce - Cold Pasta for the Last Summer Days


冷たいパスタが食べたくなったので、野菜各種を千切りにして、
カッペリーにと混ぜ合わせる、いつもの通りの一皿に仕上げようと
思ったのですが、ちょっとした実験というか、何か新しいものを
作りたくなって思いついたのが、このシンプルこの上ないメニュー。

エキストラ・バージン・オリーブ・オイルとニンニクの風味を活かして、
酸味と甘みのバランスがとれたトマトソースを作り、冷やし、
ほどよく茹で上げて冷やしたパスタにかける。

刻みパプリカ+刻みオリーブをぱらり。
仕上げに、オリーブオイルをたらりと回しかける。

次回は、刻みセロリ少々、もしくはチャイブものせてみる予定。

Last summer days I say. Well it's not exactly the
'last days' yet but it's just that I am seeing myself
enjoying that time of the year already these days.
When I start looking forward to sitting on a couch all
cuddled up in my favourite blanket, holding a nice
cup of hot chocolate with melting marshmallows,
feeling my dogs' angel -like fur gently tickling my
tootsies...ahhh how I'm all so ready for those days.

But for now, my new cold pasta.
Perfect for lazy summer days.

The tangy and sweet flavour of gazpacho-like
tomato sauce is so pleasant, it could even make
you wish that this dreadful summer days would
never end.

The sauce is so simple to make. A good quality
extra virgin olive oil and garlic are the essential
ingredients. As a final touch, I sprinkled chopped
black olive and yellow capsicum. Next time,
I'm thinking of using a bit of celery or chive
to add a bit more texture and aroma.
